Grown in traditional shade, this Guatemalan Arabica coffee is Strictly High Grown (SHG) above 4500 ft. The coop is spread over 30 small villages by the Cuchumatanes Mountains and the Maxbal forest reserve. Most of the members are indigenous Mayan that speak the dialect Q’anjob’al.
Varietals include Typica, Bourbon, Caturra and Mondo Novo and are wet processed (washed).
The coffee is mild with a peachy aroma and a hint of white pepper. With medium complexity it develops a honey nose and long sweetness towards lemon candy that becomes more prominent as it cools.
Brew this 3/4 strength for best effect.
